Choc chip Oatmeal cookies II

These cookies are so wonderfully addictive, I just had to make them again. This time round, I increased the amount of oats and I also gobbled 5 up at one go...




Recipe for 30 cookies:

3/4 cups FLOUR
1/4 teaspoon SALT
1/4 teaspoon BAKING POWDER
110g UNSALTED BUTTER, softened
1 cup LIGHT BROWN SUGAR, packed
1 large EGG
1 1/2 cups OATS
3/4 cups CHOCOLATE CHIPS

1. Preaheat oven to 175 degrees, and line two large cookie sheets with parchment paper.

2. Whisk flour, salt and baking powder together in a medium bowl.

3. In a separate bowl, by hand or by mixer, beat butter until creamy. Add sugars and beat the mixture until fluffy, about 3 minutes. Beat in egg.

4. Stir dry ingredients into butter-sugar mixture with a wooden spoon or a large rubber spatula. Stir in oats and chocolate chips.

5. Place dough onto parchment-lined cookie sheets by large spoonfuls (about 1 tablespoon each), leaving at least 2 inches between.

6. Bake until cookie edges turn golden brown, 20 minutes. Slide cookies (on parchment) onto cooling rack. Let cool, and store in airtight container.

Johnson's Booby Cake!

May and myself made this for Johnson! A chocolate swirl cheesecake covered in marzipan, icing and white chocolate fudge, shaped like boobies! Haha.. he requested it so he got it!

Minestrone Soup and Toast.

A very lazy dinner! Haha..

Campbells Light Minestrone soup with lightly buttered toast.

Chicken! Finally!

Portuguese chicken with hardboiled eggs (with some tomato sauce) and boiled vegetables. :)

Oatmeal Craisins Cookies







These cookies are soft and chewy! Very Mrs. Fields! Hehehe.. less fattening because I used brown sugar and honey.

Ingredients:
1 cup flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
100 g butter
½ cup brown sugar
1 tbsp honey
1 cup rolled oats
½ cup (or more) craisins

Method :

Preheat oven 180°C.
Mix flour, baking powder, baking soda, salt, oats and raisins. Set aside.
In a small pot, melt butter, sugar and syrup. Stir with a wooden spoon till well mixed.
Remove pot from heat and stir in the flour mixture. Mix well.
Shape teaspoonfuls of dough into balls. Place on greased baking sheet and flatten slightly.
Bake for 15mins. Cool completely on wire rack before storing.

Craisins!

Hot Cross Buns & White Peaches.

*waves* Hi everyone, I am back.. yes I DID manage to get some school work done so here I am, updating you guys on FOOD! Haha.. anyways, with Easter round the corner, I initially wanted to make some Hot Cross Buns from scratch. BUT!!! During my weekly supermarket trip, I came across a pack of freshly baked (and by freshly, I mean... JUST out of the oven) hot cross buns and I just could not resist getting them! They were great! Very moist and I love anything with wheat flour.. and sultanas! :) I also picked up some white peaches, which apart from mangoes and watermelon, is one of my favourite fruits!

Baked Beans on Crackers.

I had this for lunch one day.. a tiny can of baked beans with a couple of crackers. This is what you do if you're too lazy and would rather stare at the computer screen than cook! Haha.. because I have been procrastinating school work for ages, I am going to have to stay off this little blog of mine for a few days! So below are 3 new posts to make up for my disappearance. :P



Oatment & Chocolate Chip Cookies.

Crunchy on the outside and chewy on the inside. I loved it.. and had 3 at a go with a glass of milk! The rest were part of Megan's birthday present! :)

Pan fried salmon on a bed of Vegies.

A simple dish for a quick dinner.

Marinate Salmon with salt, black pepper, lemon juice and olive oil and pan fry on a non-stick pan with no oil for about 2 minutes on each side. Do not overcook salmon or the fish will be very dry. The natural taste and juice from fresh salmon is the best!

Cook chinese brocolli and fish balls with some oyster sauce and serve with fish on top. Top with fried shallots and enjoy!

Sakae Sushi

If you want affordable and reasonable Japanese food in Singapore, head to Sakae! The quality of the food is alright but for the price you pay, it's quite worth it. :) I personally prefer Ichiban Boshi or Sun with Moon at Wheelock Place!

My ultimate fav - salmon sashimi.

Hotate - scallops.

Unagi - eel wrapped with cheese.

Pumpkin Salad

... with lettuce, cherry tomatoes, roast chicken and pine nuts covered with a lemon dressing.
