Sundried tomatoes!
I love my sundried tomatoes so it's no wonder that I cook it all the time... brown rice is a must as well. All you gotta do is buy some sundried tomatoes and stir-fry them with chicken, mixed vegetables, button mushrooms, tomato puree or tomato paste and some fresh basil. Add salt and pepper to season. It really is a simple, nutritious and delicious meal for 1.. but I usually cook in bulk so my dinner for the next 3 days is pretty much ready when I get home from a long day at uni. :)
