Toasted Turkey Turkish Bread.

I am sooo sorry I haven't had the time to write much lately.. uni has just been so full on (I am finally feeling the stress of being a final year student!).. and as you can see, I have been cooking in bulk and also fixing up 10 minute meals. I will try to update as often as I can!

What you need:

Turkish bread, smoked turkey slices, lettuce, spinach, sundried tomatoes, cheese and cracked pepper.

Place in a flat grill for ~5 minutes and you have a perfect sandwich that is crispy on the outside with melted cheese and warm ingredients on the inside.

Apple & Raisin Scroll

The lingering aroma caught my attention.. the smell of freshly baked bread.. I knew I just had to give in to my temptation. "Just this once", I thought. I stepped right into Baker's Delight and was greeted by rows and rows of fresh bakes. It took me 5 minutes of contemplating (and drooling) before I finally decided what I want.

Wholemeal Apple & Raisin Scroll.

Chunks of apple pieces and raisins embedded in soft and fluffy wholemeal bread.

It was the perfect decision to have this for dinner.

Can I go back there again?

HK Xin Wang Cafe - Singapore

I was sorting out my pictures when I came across these photos.. During my hols, my family and I headed to a HK cafe near my house for supper 1 night.. I only remember the yuan yang (Coffee + Tea) drink and the mango snow storm being good. The rest were just average.

Mango snow storm, thick peanut butter toast, iced yuan yang.

Radish cake, French toast. hot milk tea.

Hot Cross Buns & White Peaches.

*waves* Hi everyone, I am back.. yes I DID manage to get some school work done so here I am, updating you guys on FOOD! Haha.. anyways, with Easter round the corner, I initially wanted to make some Hot Cross Buns from scratch. BUT!!! During my weekly supermarket trip, I came across a pack of freshly baked (and by freshly, I mean... JUST out of the oven) hot cross buns and I just could not resist getting them! They were great! Very moist and I love anything with wheat flour.. and sultanas! :) I also picked up some white peaches, which apart from mangoes and watermelon, is one of my favourite fruits!

Eisen's MASSIVE double chicken burger

The name says it all. This burger is massive and just suitable for my dearest Eisen. Eisen just arrived from KL that day and he was starving, I wanted to order KFC delivery for him but due to bad weather conditions, they were not delivering. So.. the resourceful me.. *hehe* came up with a genius solution to feed the hungry boy: 3 slices of bread packed full with 2 black pepper chicken patties (store bought), bacon bits, sliced tomatoes, lettuce and mozzarella cheese melted on an omelette. The verdict? Eisen absolutely loved it!

Soft Bread

This is my 4th time trying out a bread recipe and it was finally a success! Everyone at home loved it. :)

From Jo's Deli & Bakery...

Ingredients:
Makes 12

390g high protein flour
50g castor sugar
2 tsp instant yeast
1 egg
180ml water
50g butter

Topping - Shredded chedder cheese & bacon OR Cinammon sugar & raisins

Glaze:
1 egg, lightly beaten

Method:
1. Combine and blend flours, castor sugar, instant yeast, water and egg in a mixing bowl. Use dough hook of your mixer to knead the mixture at slow-medium for 10 minutes.

2. Add butter. Continue to knead for 15 minutes until the dough is elastic, smooth, non-sticky and pull away from the sides of the bowl. To test, stretch a pinch of dough. This dough should form a thin membrane before it breaks.

3. Form the dough into a ball. Place dough in a greased stainless steel bowl and cover with a damp tea towel. Leave in warm place for about 50-60 minutes until doubled in size.
Use the "finger-tip" test to check if the dough has fully risen.

4. Punch the dough down to release gases produced in the proving process. Rest for 5 minutes before going on to shaping.

5. Slightly grease working surface. Roll bread dough into little balls and compress topping on top. Proof bread for 30-45 minutes or until double in size (it may take longer depends on weather).

6. Brush top of bread dough with beaten egg. Bake in preheated oven at 180 degC for 20-25 minutes.

7. Cool buns completely on wire rack (Pic. 8) before storing in container. Best served within 2-3 days.

P.S. I actually found that having the dough slightly wet and sticky in step 2 has a better outcome. It doesn't need to entirely pull away from the bowl.
