Toasted Turkey Turkish Bread.

I am sooo sorry I haven't had the time to write much lately.. uni has just been so full on (I am finally feeling the stress of being a final year student!).. and as you can see, I have been cooking in bulk and also fixing up 10 minute meals. I will try to update as often as I can!

What you need:

Turkish bread, smoked turkey slices, lettuce, spinach, sundried tomatoes, cheese and cracked pepper.

Place in a flat grill for ~5 minutes and you have a perfect sandwich that is crispy on the outside with melted cheese and warm ingredients on the inside.

Squid Ink Pizza.

This is the BEST pizza I have ever tried. My family, Eisen and myself had this in a little Jap restaurant in Sydney last year and it was wonderful. A pity I cannot remember the name of the restaurant but I roughly know where it is.. so the next time I visit Sydney, I must have my squid ink pizza fix! :)

3 steps to a Healthy Pizza!

1. On a wholemeal pita bread, pile on lite ham, pineapple pieces, fresh tomato slices...

2. Add just a littleeee bit of light mozzarella cheese (if you're on a diet). Otherwise, just pile on the cheese. Haha.. Then place into a toaster oven for 6-8 minutes.

3. Viola! I know it looks like a mess.. but it's yummy healthy gooey stuff! :)

Pumpkin Scones!

OH Nooooo... I caved in! The diet lasted for a good 3 days and I just KNOW I am going to break it today (4th day).. Megan's having a chocolate party today and tell me.. how can any girl say NO to chocolate? That's like saying NO to your bestest bud. :( So anyway, I said I will post more pictures and the recipe for the healthy scones I ate for supper 2 nights ago.

If anyone is curious.. in 3 days, I lost 0.8kg. I won't go into the details but let's just say my bowel movements improved a lot. Haha.. not too bad for a futile attempt.

So Golden.. so Delicious..

Look how moist they are?

I first tried these scones whilst I was in Mount Gambier for my dental community placement, Helen, a dental assistant baked these for all of us for morning tea one day and I got the recipe off her! :)

Cream 1 tbsp butter, 1 tbsp hot water, 1/2 cup sugar (I reduced it to 1/4 cup)

Add 1 egg, 1 cup (I added 1.5cups) mashed cooked pumpkin mix

Add 1 cup sifted self-raising flour

Turn out and knead lightly and flatten to 1"

Cut with scone cutter and placed on floured tray in preheated 180deg oven for 12minutes.

I found the batter a little too moist because I added so much pumpkin so I ended up using 1.5 cups of flour.

"Artistic" shot.

A little tier.

Full of pumpkin goodness!

Frittata? Huh?

A traditional frittata is an omelette resembling a large pancake and containing vegetables, seasonings, and often ricotta, Parmesan, or other cheese. This one I made with Gina had spinach, diced onions and carrots and salmon, topped with tasty gooey mozzarella cheese! You will need about 5 eggs and 1/2 cup of milk to fill a round 8" pan. You can add in 1/2 cup of thickened cream but it's not necessary. Bake at 180deg till cheese bubbles and turns golden brown.

You are meant to let it set for a little while but we got impatient and sliced it up! :P

want some?

Eisen's MASSIVE double chicken burger

The name says it all. This burger is massive and just suitable for my dearest Eisen. Eisen just arrived from KL that day and he was starving, I wanted to order KFC delivery for him but due to bad weather conditions, they were not delivering. So.. the resourceful me.. *hehe* came up with a genius solution to feed the hungry boy: 3 slices of bread packed full with 2 black pepper chicken patties (store bought), bacon bits, sliced tomatoes, lettuce and mozzarella cheese melted on an omelette. The verdict? Eisen absolutely loved it!

Baked Rice

With our hands so tired from all the CNY baking, my mum could only whip up a simple meal of baked rice. It's really easy, all you gotta do is mix butter, 2 large mashed potatoes, crushed garlic, dill, sliced mushrooms, bacon or ham, some cooked chicken pieces, cooked rice, chedder cheese, thickened cream and white wine together. Then put everything on a baking dish and top the entire dish up with mozzarella cheese (the more, the better!) and bake at 180 deg for about 20-25 mins until the cheese bubbles and is golden brown.

My family and myself are absolutely overwhelmed by the support people have been showing us ever since BM blogged about us. My mail box is flooded with encouraging emails and also emails requesting for recipes. However, I am not always online so please bare with me as I reply all your emails slowly. :) Some people have been requesting for some of our CNY bakes, I am so so so sorry but we will not be selling to the public except to our family and friends. We hope you understand. I will continue to post pictures of our daily dinners or any other interesting bakes. If you would like a recipe and if it's within my means, I will definitely help you out! Thank you all for dropping by!

Creamy Pasta.

Giny made this dish for us a few weeks ago and it was so delicious that I decided to make it myself too. Even the sauce is made from scratch! Eisen gave it a 7/10 because he does not like parsley and had to spend close to 5 minutes picking all the parsley out. Hee.

Ingredients (serves 2):
Chopped onions
Chopped garlic
Bacon bits
Sliced mushroom
Chopped parsley or spring onions.

Stir fry the above ingredients with cooked pasta, add salt and pepper to taste.

Sauce:
Thickened cream (150ml)
2 egg yolks
2 tablespoon of milk

Mix all ingredients and drizzle over pasta just before serving!
