The Baking Ends....

After days and days of baking.... we have finally come to an end. To all our wonderful friends and supporters who have been sending emails enquiring about sales, I'm sorry but my ah ma's, mummy's and my hands are actually sore from baking! Also, my apologies for replying all your emails so slowly! Hehehe.. I hope everyone enjoys eating them just as much as we enjoyed baking them. Thank you for supporting us.. we have baked a total of more than 8000 cookies this year. :) Here's a little sneak peak at what goes on during the baking process...

This is just ONE day of our baking.. hahaha so you can imagine how much we baked after 2 weeks of non-stop baking!

It's all about patience...

Hi everyone!

I really am amazed by the number of people who have been emailing and leaving nice comments. Some asked if my mummy or myself are conducting any baking classes or courses. Hehe.. some of you might not know this but I am just a regular 21 year-old undergraduate who loves spending time in the kitchen while my mummy cooks and bakes really really really well and we both aspire to open a little cafe one day.

A couple of you have also asked for recipes... I even received pictures of failed baking attempts! I just wanna say that it's ok to fail... if you look through my old entries, you can see pictures of rock-hard bread or ugly cakes or cupcakes with imperfect frostings! Hahaha.. I have never attended any professional baking or cooking school and I mostly experiment through trial and error! To those of you who have never used an oven before, don't be afraid, step out of your comfort zone and start on something simple. With this, I would like to share with everyone a very easy recipe that I found on the cadbury website for crunchy chocolate and apricot cornflake cookies. I personally could NOT stop munching on them! If you would like other recipes, please leave your email address in your comment and I will try to accommodate your requests. :)



Recipe:

INGREDIENTS
125 g butter
1/3 cup brown sugar (I reduced this to 1/4 cup)
1 egg
1 cup self-raising flour
1 cup loosely packed chopped dried apricots
150 g (6 rows) Cadbury Dark Cooking Chocolate, chopped
2½ cups cornflakes - crushed

  • Bake for 20 minutes.Preheat the oven to 180°C. Cream the butter and brown sugar. Add the egg and mix well.
  • Add the flour, then stir in the apricots and chocolate.
  • Drop teaspoonfuls of the mixture into the corn flakes, and roll to coat. Place on a greased or
  • lined baking tray.
  • Bake for 15 minutes.

Chocolate & Apricot cornflake cookies

Yesterday, I surfed the Cadbury website and came across this recipe for chocolate & apricot cornflake cookies. I thought it tasted quite good.. not too sweet with lots of crunch to it. However, the rest of the family thought it was just alright so we're not selling them. Nonetheless, I'm bookmarking this recipe for myself! :D

Baked Rice

With our hands so tired from all the CNY baking, my mum could only whip up a simple meal of baked rice. It's really easy, all you gotta do is mix butter, 2 large mashed potatoes, crushed garlic, dill, sliced mushrooms, bacon or ham, some cooked chicken pieces, cooked rice, chedder cheese, thickened cream and white wine together. Then put everything on a baking dish and top the entire dish up with mozzarella cheese (the more, the better!) and bake at 180 deg for about 20-25 mins until the cheese bubbles and is golden brown.


My family and myself are absolutely overwhelmed by the support people have been showing us ever since BM blogged about us. My mail box is flooded with encouraging emails and also emails requesting for recipes. However, I am not always online so please bare with me as I reply all your emails slowly. :) Some people have been requesting for some of our CNY bakes, I am so so so sorry but we will not be selling to the public except to our family and friends. We hope you understand. I will continue to post pictures of our daily dinners or any other interesting bakes. If you would like a recipe and if it's within my means, I will definitely help you out! Minty Chocolate Chip cookies

Every girl loves her chocolate right? So I thought...hey.. let's do something chocolatey for chinese new year! Instead of the usual traditional cookies, I wanted something different.. and chocolate! After playing around with 2 batches, I finally came up with the perfect recipe, combining chocolate chips, cocoa powder and mint! I really love mint too and each cookie is loaded with Hersheys semi-sweeet chocolate chip and topped with a peppermint chocolate glaze. Mmmmm... triple chocolate goodness!

Oatmeal Cookies


A great treat for the health conscious. Made out of wholemeal flour and reduced butter and sugar, it's a family favourite as we munch on these cookies non-stop!
