Frittata? Huh?

A traditional frittata is an omelette resembling a large pancake and containing vegetables, seasonings, and often ricotta, Parmesan, or other cheese. This one I made with Gina had spinach, diced onions and carrots and salmon, topped with tasty gooey mozzarella cheese! You will need about 5 eggs and 1/2 cup of milk to fill a round 8" pan. You can add in 1/2 cup of thickened cream but it's not necessary. Bake at 180deg till cheese bubbles and turns golden brown.


You are meant to let it set for a little while but we got impatient and sliced it up! :P
