Salad Ideas...
So what do you do if you have loads of lettuce, cucumber, cherry tomatoes, avocado and fetta cheese in your fridge? Well.. the answer is to have salad everyday! Haha.. here are a variety of ideas for you guys... and they involve very basic ingredients.
Spiced chicken and egg salad.Salad with Pan-fried salmon with shitake and oyster mushroom sauce.

Steamed Seafood and Tofu
I love steaming my food - the natural sweetness that the seafood adds to the stock is so delicious and good for you! So.. how do you steam an entire meal in one plate? Easy.. hehe.. here's a step by step guide.
1. Use a large deep set plate.
2. Add fresh basa fish fillets marinated in cornflour, salt and pepper.
3. Pile on 6 LARGE fresh prawns.
4. Pile on tofu slices.
5. Add mushrooms, sour plums, sliced chilli and ginger, spring onions or coriander and tomatoes.
6. Add 2 tablespoon of light soya sauce, sesame oil, 2 tablespoon of water and a dash of white pepper.
7. Steam for 15 - 20 minutes.
8. Splash shaoxing jiu (chinese cooking wine) and serve immediately!
I also cooked a simple cabbage and carrots dish.

Simple Homecooked meal...
After being in Victor Harbor for 2 weeks.. I was just looking forward to some home-cooked food and I had the biggest craving for tofu in a tangy sauce!
So I made sweet and sour pork, prawns and tofu.
How do you make this?
What you need: Chopped garlic, tofu, sliced pork and prawns.
Sauce: Sweet chilli sauce, tomato sauce, sliced fresh chillies. Corn starch to thicken the sauce.
So easy! :)
You can batter the pork and add pineapple slices or capsium but I like it simple!
A shitake and oyster mushroom with vermicilli dish which my mum would often cook during Chinese New Year!

Seafood Penne Carbonara...
A fail proof recipe!
What you need to serve 2:
Thickened cream 100g
1/4 cup fresh milk
300g of mixed seafood (I used salmon, calamari, mussells, fish and prawns)
Button mushroooms
Chopped parsley
Shaved cheese
3 or 4 cups of cooked penne
Salt and pepper
Chopped garlic
1 egg yolk
1 tablespoon of butter
Spring onions (optional)
Method:
Stir-fry garlic, seafood, mushroom and penne in butter. Add salt and pepper to taste.
Make sauce - Combine cream, milk, egg yolk and spring onions.
Pour sauce over cooked pasta. Garnish with parsley and shaved cheese.

I'm still here! :) Hehe.. sorry for the sudden disappearance again.. anyway, the next few posts will be a series of home-cooked meals since Eisen is back in Adelaide! I love cooking but when I was living alone, I didn't see a point in cooking more than 1 dish for myself. It's great that Eisen is back now because that means I can cook and cook and cook and Eisen will finish off everything in front of him! :D Ok enough of me talking and here are the pictures...
