Pan fried cheong fun

Hi guys! I am back with a bang! haha.. uploaded many many photos from my exam study leave period onto my main blog (OrangeSpirals) too so go check it out! Here are the recipes which I promised you guys.. I am slowly updating them one by one...

Cheong fun has always been one of my favourite yumcha orders and I made Eisen go do some grocery shopping at the Asian Supermarket and he bought a pack of pre-made cheong fun!

One Saturday morning, Eisen said, "Hey.. why don't you pan-fry them?" And I thought, "oooh.. good idea!" So this is exactly what I made!


Ingredients (serves 2):

Pre-made cheong fun (4 long rolls)

Hoisin Sauce (3 tablespoon)

Hot water (3-tablespoon)

Sesame seeds

Method:

Pan-fry cheong fun on each side for about 2 minutes each.

For sauce: Combine hoisin sauce and water together.

Sprinkle sesame seeds on top and serve!

Honestly, I still prefer the traditional steamed version! So I made it the next day! :)

Bee Hoon (Thin rice noodle) Soup

I lovelovelove soupy noodles! hahaha.. so I made this in like 20 minutes for dinner!

Ingredients:

Beehoon

Fishballs, dumplings, cuttlefishballs, fish cakes, vegetables etc etc.

Chicken stock (2 cubes mixed in 4 cups of boiling water)

2 tablespoon light sauce

Sesame oil (1 teaspoon)

Pinch of pepper

Vegetable Noodles

These vegetable noodles are really good! We bought them at an Asian Supermarket! The recipe is similar as the above bee hoon soup but remember to boil the dry vegetable noodles for 3-5 minutes first (as per instructions at the back)!




Desperate Measures - Instant Mee goreng!

The favourite dish for many boys. Eisen was hungry and he wanted supper one night.. so I tore open 2 packets of the famous Mee Goreng instant noodles and made this for him.

Stir-fry vegies & Egg with minced chicken.

A simple home-cooked dinner with plain porridge!


This is easy.. I am sure most of you know how to cook this.. just remember plently of chopped garlic!

This doesn't look very good but it is a dish that I grew up eating! Egg with minced chicken/pork.

Method:

Stirfry 2 cloves of chopped garlic

Add 100-150g of minced meat and stir fry till cook. You can also add prawns, char siew (bbq roast pork), sliced chillies.

Beat 3 eggs together and pour over minced meat.

Allow egg to cook partially.. add 1 tablespoon of dark soya sauce, 1 teaspoon of oyster sayce, 1 tablespoon of water and a pinch of salt and pepper.

Scramble eggs and minced meat and serve with porridge!

Nasi Lemak 2

Recipe is similar to my first attempt except that I added onions to the sambal and made an extra dish of stir fry vegies with garlic in place of unhealthy spam!


Bacon & Mushroom Quiche 2

Second attempt at Bacon & Mushroom Quiche, recipe the same as the previous one! Just as yummy!

Cold Soba Noodles

Exams are fast approaching and I always make it a point to eat healthy home-cooked meals whilst preparing for my exams. Here are some ideas.. they can all be prepared and cooked in less than 30 minutes (the dumplings took me 15 minutes)... remember, you gotta feed that brain of yours if you want it to work! :P




Method:

Boil instant soba noodles for 3-5 minutes (as per instructions). Wash them under cold running water once cooked so that you will get a springy texture of the noodles.

Chop 2 pieces of fish cakes into smaller pieces and mix with cook noodles.

Dilute sauce as per instructions on bottle. I diluted mine in ratio 1 sauce: 1 water.

Sprinkle black and white sesame seeds and fresh crisp seaweed.

Dip soba noodles into separate bowl of sauce and slurp away!

Buttermilk Pancakes with Caramelized Bananas

Hello fellow food lovers and aspiring chefs/bakers! Below are some of the REALLY simple and quick meals I made during the exam period. Recipes and commentaries will be up after my exams 2 weeks later. For now, it's back to my books! Enjoy the photos and thanks for dropping by! :D




Bacon & Mushroom Quiche



Ingredients:

2 cloves of chopped garlic

1/2 chopped onion

5 shoulder bacon (chopped into small pieces)

100g of white button mushrooms sliced

Shredded chedder/swiss cheese (150g)

3 eggs (beaten)

100g of thickened cream

1 pre-made pastry crust

Method:

Heat pastry crust in preheated oven at 160deg for 15 minutes.

Pan fry onions, garlic, bacon and mushroom till cooked. Sprinkle salt and pepper

Pour thickened cream slowly into beaten eggs and mix together.

Pour ingredients into the pastry crust, sprinkle a layer of cheese and then our egg/cream mixture followed by final layer of cheese.

Bake at 160deg for 35-45 minutes.

Hog's Breath Cafe.

About a month ago, Eisen and I went to Hog's Breath for the famous slow-grilled steak. Honestly, the food was only alright. The only thing that I am missing from Hog's Breath is the CURLY FRIES! I love curly fries. Hehehe.. Other than that, it is not exactly worth it. We had an 'Entertainment Book' voucher so we had 25% off the total bill. We also did not realise that the waiter had taken 25% off the bill TWICE. We only realised it when we got home! Hahaha.. so Eisen's MEGA-cut traditional steak only cost $17 (from $37++) while my Texas combo cost $14 (from $27++).. All in all, we had a pretty good deal! :P

Lamb and roast vegetables.

Guess who cooked tonight? Presenting my very own guest chef - *drumroll*.... EISEN!! hahaha.. the boy grilled his favourite lamb while I chucked some vegies into the oven.

Lamb Marinate (marinate for at least 30 minutes):

2 tablespoon of olive oil

1 tablespoon of rosemary (we used dried rosemary, fresh would be better of course!)

3 cloves of garlic - smashed

salt and black pepper

added a little BBQ grill marinate too.

Pan-fry or grill for 1-2 minutes on each side.

Roast vegetables:

Pumpkin, sweet potato, carrots, potatoes, beans, corn.. whatever you like.

Chicken salt, pepper, various italian herbs.

Drizzle some olive oil, toss and put in pre-heated oven at 220degress for 30 minutes.

Carbonara.

Winter's here.. and this is the time, Eisen and myself crave for some good ole creamy pasta. I whipped up this simple dinner myself a few days ago.



Carbonara Sauce:
2 cloves of chopped garlic
150g of button mushrooms - sliced
5 slices of shoulder bacon (the non-fatty part)
Handful of Chives
200ml of thickened cream
150g of shredded cheese (preferably swiss cheese)

Method:
Heat up 2 tablespoon of butter, add garlic, bacon and then mushroon and pan-fry till cooked.
Next, add in cream and cheese, lower heat and simmer for 2-3 minutes.
Add chives, stir through and serve hot.
