Nasi Lemak

As I promised, I made NASI LEMAK from scratch this weekend! Nasi Lemak basically means coconut rice.. it's really fragrant and the most important part is of course, the rice and the sambal, both of which I made from scratch!! Eisen gave it a 8/10! (which is really rare because he usually rates the dinners I cook an average of 7/10.. hahaha). Nasi Lemak is sometimes served with chicken/beef curries but I decided to do mine the famous "Punggol Nasi Lemak" way... as Singaporeans would know.. Changi Village, Adams Road and Punggol Nasi Lemak all have a really high standard. Presenting.. "Berenice's Nasi Lemak!"



Coconut Rice:
2 cups rice
2 cups coconut milk
1.5 cups water
1 teaspoon of salt

Shrimp Paste Fried Chicken Wings:
You can get shrimp paste at almost every asian grocery store, just coat the chicken wings and deep fry.

Luncheon meat:
Pan fry on both sides for 1-2minutes

Hard-boiled eggs and sambal:
Sambal is a family secret! :P

Usually served with otah otah (spicy fish paste) cucumbers and ikan bilis too.
